1) You can only make as many copies as you can find blank grimoires or tomes. They are neither overwhelmingly cheap nor common. It's not like they can jot down Spellbook of Magic Bullet on a napkin or a letter.
2) You can only make grimoires of spells 2 below your casting level. You can't make any grimoires at level 2 (because they'd be caster level 0 spells); you'd have to be level 5 to make a grimoire of alchemy, etc.
Even if resetting, you'd need the level and intelligence to understand your own grimoires, and you'd only get your newbie spells back - the top 2 levels of spells you used-ta-could cast are gone, because you couldn't make books for 'em.
3) Spells you can cast only - you can't make an IWD or Woodsman scroll, only Fireball, etc. For when you need to cast and you're low on magic, but more likely for when you're low on cash. ^_~
