Good quests. Lots of good quests. Constant quests. Never being able to finish all quests!

no flashy, or amazingly detailed npcs. a simple bomb, sword, and arrow. a huge gmap, and as spark said quests. and maybe not too many players, because itd give a more "rpgish" feel if you knew most of the people who played.

As has been said, decent quests.

I liked a lot of the quests from the old Classic overworld. They had a real sort of Zelda feel to them, and that's what I figure Classic should be about.

Bring back the quest gameplay from A Link to the Past and Link's Awakening and it's perfect for me, the rest just depends on good PKing and sparring.
