What is the point of rolling stats and getting random scrolls when you start? Why not just have default stats and be able to pick a scroll?

I mean people just restart over and over until they get what they want anyway, plus the stats aren't even done so they are a combined total (I don't think)

Like I roll the stats once and everything is low, and then another time and everything is high, I didn't feel like spending the time to add up all the stats each roll, but I think the overall total is different every time. So that kind of makes rolling silly.
