Probably because there are no sword/equipment/armor shops where you can buy things for plat. You either need to craft everything or alchemize it, which means you lose no money and money doesn't really have much purpose.

Also, if there was some kind of smithery where you could pay x amount of plat to have items enchanted instead of doing it yourself with dias then I could see plat becoming more useful.

Dias are also lighter than plat, so it's easier to carry around 100 dias then it is to carry 50k plat.
