How do you make a string and everytime somthing happens it adds a certain ammount to the string.

I do not wanna make fishing (to outdont) but in example say I was fishing an it got a fish. How could I have a string made that stayed with the player and when they caught a fish it added 1 to a string called fish. Then they could go sell it and the NPC saw how much was in that string and set it back to zero and dropped a gralat or each 1 in the string so if they had 30 they got 30 gralat.

I will do anything for some help. :D
